Can’t believe summer’s almost over already! Soon it’ll be those chilly days of fall (although here in the North East, it feels like fall is already here).
A week or two ago, I really wanted to make cake. I don’t know why, but it just needed to be done. However, since I haven’t been home much this summer, and being the only baker in the house, our ingredient supply had dwindled. I was left with a lot of egg whites, some sugar, and some flour. Somewhat discouraged, I decided to watch the food network. It was then the perfect cake was being made before my eyes-angel food cake. This super light and airy cake requires egg whites, sugar, and a little bit of flour and flavorings. To top it off, it had a creamy lemon yogurt sauce poured across the top; a perfect summery addition to this cake. Watching the TV, I hesitated, since angel food cake, to me, tastes like sugary air-there’s not much to it. However, I made it anyway, and it was delicious. Any of you who are watching calories, this is a great dessert for you. Its light, so its ok to take a big piece :P. It reminded me of those really nice puffy clouds you see on a perfect summer day. It melts in your mouth quite nicely too. It was a fun reminder of these last few days of summer, and will definitely make it again in the future!

Mix it up and be creative! If you like fruit, mix in some of your favorite berries and/or jam for a tart and fruity sauce)
